Fix and Freeze Slow Cooker Recipes

You have ordered one pizza too many at the end of a long day! When we have a plan for a nutritious dinner, it's easy to skip the pizza routine. The three recipes in this SLOW COOKER RECIPE series are designed for you to shop for, prep and assemble, and then freeze for a later day. It takes about an hour of active kitchen time to prep all three recipes. That's a reasonable effort for a huge gain in the days or weeks ahead!

  • Prep: 1 hr 10 mins

Ingredients

SLOW COOKER RECIPE NUMBER ONE: Chicken Marsala

1 medium onion, chopped

1 red pepper, diced

3 cloves garlic, minced

2 T chickpea flour (or whole wheat flour)

1 T oregano

2 pounds humanely raised boneless/skinless chicken thighs; cut into pieces

14 oz. can diced tomatoes

1/3 cup Marsala wine or your wine of choice

Assemble:

In labeled resealable plastic freezer bag, layer ingredients in order listed, starting with the onions and ending with the wine. Close bag and seal. Freeze up to 2 months.

Thaw bag in fridge up to 24 hours before desired cooking time.

Transfer contents of bag to slow cooker and cook on high for 4 hours or on low for 6 hours.

Serve over noodles or brown rice. Serves 4

SLOW COOKER RECIPE NUMBER TWO: Moroccan Short Ribs

2 medium zucchini, sliced

1 carrot, diced

3 cloves garlic, minced

15 oz. can chickpeas, drained

2/3 cup olives

1/4 cup chickpea flour (or whole wheat flour)

1 T thyme

1 t ground paprika

1/2 t cinnamon

1/2 t ground cumin

1/2 t ground coriander

2 pounds grass-fed, humanely raised lean beef short ribs

Assemble:

In labeled resealable plastic freezer bag, layer ingredients in order listed, starting with the zucchini and ending with the ribs. Close bag and seal. Freeze up to 2 months.

Thaw bag in fridge up to 24 hours before desired cooking time.

Transfer contents of bag to slow cooker and cook on high for 5 hours or on low for 9 hours.

Skim off fat before serving. Serves 4

SLOW COOKER RECIPE THREE: Hearty Beef and Vegetable Stew

2 stalks celery, diced

2 carrots, diced

1 medium onion, chopped

1 red pepper, sliced

3 cloves garlic, minced

15 oz. can chickpeas, drained

2 beef bouillon cubes, crumbled

1/4 cup chickpea flour (or whole wheat flour)

2 T rosemary

2 pounds grass-fed, humanely raised lean bison or beef chuck roast; cubed

14 oz. can diced tomatoes

Assemble:

In labeled resealable plastic freezer bag, layer ingredients in order listed, starting with the celery and ending with the tomatoes. Close bag and seal. Freeze up to 2 months.

Thaw bag in fridge up to 24 hours before desired cooking time.

Transfer contents of bag to slow cooker and cook on high for 5 hours or on low for 8 hours.

Skim off fat before serving. Serves 4

Directions

1On the day you plan to enjoy one of these easy meals, pop the freezer bag of your choice into the fridge before you leave for work. It could go something like this: While drinking your morning tea, when you anticipate a long day ahead, select the Fix and Freeze Meal of your choice from your trusty freezer. Take your slow cooker out of the cupboard. Determine whether you will start it on low for 6-9 hours prior to dinnertime (based on what your freezer bag label says), or use your slow cooker’s timer feature so that it turns on at your preferred time later in the day. Transfer contents of freezer bag to slow cooker. Take another sip of your tea. SUCCESSS!
