Basic Chickpeas in a Pressure Cooker

Chickpeas are in the legume family. They are a great source of plant-based protein! Chickpeas are the basis of most hummus. This recipe can be used in your own homemade hummus.


1 cup chickpeas

2 cups water

5-inch piece kombu



1Wash chickpeas in a strainer.

2Place them in a pressure cooker with water and kombu and cover.

3Bring to pressure following the directions of your pressure cooker.

4Reduce heat and cook for 1 hour.

You can make delicious salads by adding chopped vegetables, sea vegetables (hijiki, arame), onions, scallion, fresh rosemary, sage and a little olive oil.
