Acorn Squash with Applesauce

I love everything squash. Potatoes rank twice as high on the glycemic index as squash! Use unsweetened applesauce and enjoy.


1 acorn squash

1 tablespoon olive oil

1 cup applesauce



1Preheat oven to 350 degrees.

2Cut squash in half and remove seeds with a spoon.

3Place squash halves skin side down/flesh side up on a baking sheet.

4Rub olive oil over squash halves.

5Fill squash halves with applesauce.

6Sprinkle cinnamon on top of each.

7Bake for 45 minutes, or until a fork inserts smoothly through squash meat.

Try different flavors of applesauce.
